Key Lime Pie

There is something irresistible about key lime pie. Like its cousin lemon meringue, key lime pie is mouth-puckering tart and a smile-making sweet, like a pie version of lime flavored starburst candy, but in custard form, surrounded by whipped cream and graham cracker crumbs.

This all American pie is made with sweetened condensed milk, lots of lime zest and juice (preferably from key limes), and just enough egg to give it a good set.

Grilled Bacon Meatloaf Burgers – Building a Faster Meatloaf Sandwich

I love meatloaf, but not as much as I love meatloaf sandwiches. In fact, I’ll make a meatloaf just for the leftovers. I’ll fry the cold slice in a buttered pan until hot and crusty, and enjoy it on toast with ketchup.

This is that version, plus bacon, in burger form. What it lacks in loaf shape, it more than makes up for by being faster and easier. The epicenter is close to the town where my great-grandfather came from, Salle, which itself was destroyed in a quake in 1933. In this case, the hardest hit was the town of Amatrice, whence comes one of Italy’s most iconic dishes. The historic center of the town has been essentially obliterated, as well as in two other towns, with hundreds of casualties.
Sadly, this weekend was meant to be the 50th annual festival in that town celebrating that dish, the Sagra degli Spaghetti all’Amatriciana. Needless …read more
