Blue Corn Chicken Nachos

In the mood for some red, white, and blue? How about red, white, and blue nachos, with blue corn tortilla chips!

I’ve always loved blue corn tortilla chips. I don’t know if it’s my mind playing tricks on me, but I think they taste better than regular tortilla chips. Maybe because they’re less industrial and have more flavor than the corn we get these days?

Whatever, the chips taste great and make a delightfully blue canvas for our white cheese sauce and chicken, and (mostly) red fresh pico de gallo salsa.

Chocolate Energy Bars – Looking Good…Maybe Too Good

If you compare these chocolate energy bars to similar fruit/nut bars sold at the store, I think they taste better, are nutritionally superior, and probably cheaper to make at home. The only problem is they look so good.


These look like fudge brownies, and so it does take a millisecond for the brain to process that they’re not going to taste like fudge brownies. Having said that, they really are delicious, and satisfying in a non-decadent, but still chocolaty way.

Try your hardest to find Medjool dates, but if you can’t, any dried date should work, as long as it’s …read more

This week I am turning Make, Mend, Grow into Make, Mend, GO! I spent 10 days on the road with the family driving through Yellowstone, as well as taking side trips into Montana, Idaho, and other areas of Wyoming. For something called “cooked cream,” there’s very little cooking involved here. Actually, there is very little anything involved here. If you can somehow manage to start your panna cotta the day before you want to eat it, this classic Italian recipe is about as simple as it gets.

I adore a Thai curry, and I’m always looking for new ways to use my favourite Thai curry paste. It’s such an easy way to make an immensely tasty dinner. This spicy veggie laksa is basically a new twist on an old favourite – any excuse!

Laksa is a spicy noodle soup that’s made in various forms all over East Asia, with each region putting their own spin on the dish. I suppose this is my own spin, since I didn’t really follow any recipe in particular – it may not be authentic, but it was bloomin’ delicious.
