Grilled Pork Tenderloin with Orange Marmalade Glaze

Do you like grilling pork tenderloin? We love it! It cooks up so quickly and lends itself to any number of savory glazes.

The glaze we are using for this recipe couldn’t be easier to pull together. It uses orange marmalade, soy sauce, honey, rice wine vinegar, and a pinch of red pepper flakes.

We marinate the pork first in half of the glaze sauce, and then use the remaining sauce to coat the finished tenderloin.

This is the kind of recipe that makes me so, so desperate for someone to invent calorie-free pastry. I could happily eat a million of these cheese and onion lentil rolls. I didn’t though, of course – I managed to stop myself after about thirty five.

Same salt and peppered wild and coarse hair, unkempt and growing out from his usual military haircut covered slightly by a fisherman’s cap. Grilled Sweet Potatoes

Have you ever tried grilling sweet potatoes? It’s quick and easy. You just peel the sweet potatoes, slice them into 1/4-inch slices, paint them with olive oil, sprinkle on some salt, and place on a hot grill.

To serve, you want to slather them with some sort of vinaigrette—olive oil to keep them from tasting too dry, and an acid like lime juice or lemon juice to balance the sweetness of the sweet potatoes.

Do you ever cook with smoked paprika? It’s one of my favorite spices, reminds me of barbecued potato chips. It’s great with chicken and also perfect with chickpeas.

So for this dish, I decided to marry the two—chicken and chickpeas, all coated with smoked paprika (and some pepper and oregano), and bake them on a bed of sliced onions.

Perfect! Especially for a no-fuss midweek meal.

Black bean soup is definitely one of my favourite soups ever, if not the favourite. Black beans seem to have so much more flavour than other beans. I don’t know if it’s just a psychological thing, because they give such a beautifully dark, rich soup – but whatever the reason, they’re damn tasty.

The best thing about this black bean soup (aside from being yummy) is that it only takes 15 minutes to make!
